Vangibath

Just made an awesome vangibath (yes, my husband said that!!). I would like to share the recipe here. Basic recipe is from Asha's blog, but I made a few changes to it.

Steam:
Rice with enough salt


Half cook :
Brinjals (I used the huge purple ones)



Fry in a little oil and make into a paste:

Dhaniya
Urid dal
Chennadal
Red chillies
Cloves
Cinnamon
Caper (marati moggu)
coconut
peanuts (optional)


Heat oil in a pan :

Season with mustard seeds, add the paste and fry until oil floats on top, and then add half cooked brinjals and cook until brinjals are fully done.

Mix it with rice. Add chopped coriander leaves!

Yummmy!!!!!

Eat with some chips and some nice colourful raitha (make it with carrots, cucumbers and coriander leaves)
